Spaghetti Squash, Bacon, Spinach and Goat Cheese


Cajun Stuffed Chicken
Serves 4
Preparation time: 15 minutes
Cooking time: 40 minutes
1 lb boneless, skinless chicken breasts
4 oz pepper jack cheese, shredded (you can use up to 6 oz)
1 c fresh spinach
2 tbsp olive oil
2 tbsp Cajun seasoning
1 tbsp breadcrumbs - can omit for Paleo
Sea salt, to taste
Freshly ground black pepper, to taste
Lots of toothpicks
Click the link above for full instructions. I follow a paleo/primal lifestyle. So I used pastured Chicken. I also added onions and mushrooms to the spinach with an egg instead of bread crumbs. I also use Himalayan Salt vs Sea/Table salt. If you haven't tried it, you should, there's a big taste difference!
