Stuffed Jalapenos



Stuffed Jalapenos



1 pound ground sausage, we prefer spicy 
8 oz Cream Cheese, softened
1 cup shredded Cheddar Cheese
1 tsp Garlic Powder
1 pound jalapenos, halved lengthwise to avoid added heat seeded
Walnut Oil to coat baking sheet

Preheat oven to 425 degrees.
  
Brown sausage in a skillet. Drain grease.  
I used my handy stand mixer for the next step. Use the paddle attachment and cream the cream cheese, garlic powder, and cheddar. Fold in the sausage. 
Spoon sausage mixture into each jalapeno half. 
Arrange stuffed halves in a baking dish.  
Bake 20 minutes in the preheated oven, until bubbly and lightly browned.

Enchilada Sauce


Enchilada Sauce


Ingredients:

3 TBSP Walnut oil
1 TBSP Almond flour or Yarrow root
2 TBSP chili powder
1 tsp garlic powder
1 tsp ground cumin
2 1/2 cups Organic Chicken broth
8 oz tomato paste
1 tsp dried oregano
salt, to taste preference

Directions:

In a saucepan, add oil, then, flour.  Whisk until well incorporated and light brown.  About 2 minutes. Whisk in chili powder, garlic powder and cumin.  Add in chicken broth, tomato paste and oregano. Add salt if desired.  Increase heat and let sauce come to a simmer. Cook for about 10 minutes until thickened and smooth.
Makes approx 3 cups

Cucumber Salad Perfect for Memorial Day

Cucumber Salad

 • 6 Large Cucumbers sliced thin
• 1 Tomato
• 1 Red Onion
• 1 Tbsp Himalayan Salt
 I like using a mandolin to cut the cucumbers and onion.

 Dressing: 

• 1/2 Cup Bragg's Apple Cider Vinegar
• 4 Tbsp Walnut oil
• 2 Tbsp Local Raw honey
• 1 tsp Celery Seed
• 1 tsp Dried Sweet Basil
• 1 tsp Ground Mustard Seed
• 1 tsp Garlic Powder
• 1/2 tsp Himalayan salt (to taste)
• 1/2 tsp Dried Oregano
• Couple Dashes of Cayenne Pepper
• Fresh Ground Pepper to taste

 Optional:

• Roasted Red Peppers 
• Add Green or Black Olives 


Cut cucumbers first. Place sliced cucumbers in a strainer and toss with 1 Tbsp salt. Let stand for 30 minutes. Place strainer, with cucumbers, inside a larger bowl to catch extracted water. You can leave it on the counter or keep it cold in the fridge.
Prepare onion and tomato and add to a large bowl. Also dice any optional ingredients into bite size pieces, and add to the bowl. In a small bowl whisk together all the dressing ingredients.
Add the dressing promptly to the tomato/onion mixture folding it in. Once the cucumbers are done sweating, drain all excess water. Fold Cucumbers into dressing and serve.

Welcome

Well this is my first ever BLOG! Guess I'm a little late to this part of technology. I don't really have any plans of what I will be posting as of yet. Probably just book reviews, and maybe things I've seen on pinterest. That may or may not have gone horribly wrong. I'm a wife, mom, aspiring writer. I'm also a Veteran(USMC), and I'm married to an Army Combat Medic. Yes, laugh it up. It can sometimes be funny, usually way after the fact. I'm also doing the student thing to collect my GI Bill. It is what it is.
